I love me some truffles. One of the best condiments to most dishes. And they smell intoxicating. I dread ordering truffle burgers, however. Even good establishments frequently overindulge and put so much of that stuff in their sauces that that's all you taste. Especially the artificial stuff (which I'm not even necessarily a hater of) gets way too overused.

Which is why it's like a glass of ice water in hell when someone who knows what they're doing comes along.

The truffle taste in Truffy's sauce is still very prominent. But they manage to hold off just enough to bring it to the edge of acceptable. I'm very appreciative of that.
