What is there to say? The burger is basically perfect. It was clear from the moment the waiter brought it to me - it looked downright photogenic and tasted just as good.
There are a few telltale signs that pretty much immediately separate great joints from mediocre ones. One of them is restraint. When I skimmed the spec sheet of this burger my eyes immediately locked in on that BBQ sauce. As I've written in countless reviews, it can be a great ingredient but can also quickly overwhelm a dish if not used sparingly. It was (obviously) used properly here.
And not just the BBQ sauce. Everything was balanced perfectly. I even approve the inclusion of the pickle. After all, the richness from two sauces, Cheddar, bacon, and egg needs a strong counterbalance.
The burger is very reminiscent of Kavarna Tiskarna's Dirty Sanchez (and for that matter d'Ojaja from the unfortunately closed d'Burger). They have the same bones: beef patty, bacon, egg, lettuce, and tomato but differ significantly in taste, mostly due to distinct sauces and the differing choice of cheese.
Both, Flying Bacon Extra and Dirty Sanchez are some of my favorite burgers of all time. But I have to give give the crown to Flying Bacon Extra. Flying Smoker's beef is just better. It's that simple.
All right, enough of all this positivity. You surely want to know where the catch is: the burger is ½ point from perfection, after all.
It comes down to a nitpick: that pickle is a little basic. It could use some more distinct pickling spices or something. It seems like something I could buy from a store, not something made in-house or sourced from a... professional pickler? I don't know what they're called, I'm sorry.
You may think this is a bit of a harsh reason for the point loss - I agree! But the fact of the matter is, mine is a relative scoring system and the (rare) 5 "star" burgers on my list are simply at that level. Pop's Place's (arguably flagship) 10th Anniversary California Smash has "custom" pickles, to give a concrete example.
But make no mistake: this is one of the very best burgers in Ljubljana. Go try it. Now.
