This is a strange one. An overall positive impression but with serious drawbacks.

To start with the good, the meat they offer is, without exaggeration, the most tender I've ever tested. Patties that can be torn apart with tongue alone. It's almost to the point of a horseshoe, where you start to wonder if the loss of texture was worth it. If you ask me, It is.

The burgers are also some of the most flavorful out there, entirely thanks to their delicious sauces. It's like every ingredient in the sauces was individually prepared in the way that brings out its strongest essence. Excellent work.

On the flip side, however, the bad is as pronounced as the good.

First, the sauces I just mentioned - as delicious as they may be - are just too strong. There were some bites I took where I was simply unable to taste the beef. In my opinion the sauce should always complement the meat's flavor, not supplant it.

Second, the patties are really small. Less than 50% of the surface of the buns in my estimation. That's just sad. Additionally, their tenderness is a double-edged sword. The burgers - buns and all - are straight up too soft. Gig tries to compensate with iceberg lettuce (and sometimes bacon) to add at least some texture but it doesn't work. Some bites can feel like eating baby food. Not good.

Lastly (and this is a minor nitpick) their burgers are messy as hell. I was very thankful that a knife and fork were available. Half of the sauce ended up on the plate - and that was me being careful.
